The origin of soy sauce dates back to the Middle Ages, when a special miso was introduced by a Zen monk who went to China to train. It is said that the people of Yuasa, Kishu, devised the juice that accumulated in the miso barrels, and it is said that the current soy sauce was born.

The townscape, which flourished as a soy sauce brewing industry, is lined with townhouses with impressive tiled roofs and delicate latticework, and white-walled storehouses.

Yuasa Town in Wakayama Prefecture is the birthplace of soy sauce, and the old townscape remains in the vicinity. There is also a fishing port nearby, and the scenery is wonderful. I was born and raised in Kyushu, but walking around Wakayama on the outskirts of Osaka reminds me of the countryside and makes me feel at ease.
